SAUTEED ZUCCHINI AND CHERRY TOMATOES

Ingredients

1 tbsp(15 mL) extra-virgin olive oil
2 zucchinis, cut into 1-inch pieces
1 clove of garlic, minced
1/4 tsp dried oregano
1/4 tsp (1 mL) salt
1 pinch hot pepper flakes
1-1/2 cups (375 mL) cherry tomatoes or grape tomatoes, cut in half
1 pinch granulated sugar
1 1tbsp (15 mL) thinly sliced green onions, (green parts only)
2 2tsp (10 mL) red wine vinegar
