Parmesan Baked Potatoes

I have never posted my recipe for baked potatoes anywhere before, so here goes. I'm far from a chef, but I have been fixing these for several years now, especially when my wife is going to grill a couple of New York Strips (all you grillers remember the following tip for your steak seasonings...it's all in the WHITE PEPPER). Take desired number of baking potatoes and boil them in water with just a bit of sea salt added for 30 minutes. While boiling, prepare a thick paste of olive oil, sea salt to taste, and a LIBERAL amount of grated Parmesan cheese...make enough of the paste to cover the quantity of potatoes. The paste should be of a consistency that would pour quite slowly. When the potatoes have finished boiling, prepare 2 12"x12" sheets of aluminum foil for each potato. Place potato on the 2 sheets of foil. Take a fork and jab potato several times on each side. Coat the whole potato with the prepared paste and wrap with the foil. Place in baking pan and put in a preheated 350 degree oven for 30 minutes. Remove, unwrap, and add desired toppings...enjoy!!
