Was wondering how authentic it is and if you or the wife has made this or something along the lines or added anything different. I added some carrots to mine and ready for the oven.

Looks great bud. That is exactly how I would make my style of oven roasted chicken. The wifey does a bit more traditional as she is not Greek. As long as you have the lemons, garlic and oregano then you are doing it the authentic way. Enjoy.
